Open Sandwiches. Let us just take a minute to marvel at this genius idea that has been around like since forever. I think sandwiches are seriously underrated. It is practically the easiest way to get a fresh meal on the dinner or lunch plate in minutes.

How to make a Stir Fry Beef and Beetroot Hummus Open Sandwich
Three components make up this yummy open sandwich meal.
Firstly, grass fed beef strips gets flash fried with loads of salt. Then, a generous spread of Jacksons Beetroot Hummus makes its appearance. Beautiful exotic tomatoes with black pepper is also added.
Lastly, a sandwich isn’t a sandwich with, let’s face it, good quality bread. I love to use long fermented toasted sourdough slices for this version.

There are literally millions of different toppings for open sandwiches. With this healthier bread, you can go wild with your toppings. Add your choice of green leaves, spreads and protein.

- 30 ml olive oil
- 500 gr beef stir fry
- garlic salt and black pepper to season
- 1 artisan sourdough bread 4 slices, toasted
- 4 tablespoons organic beetroot hummus
- 2 cups exotic tomatoes, sliced
- 1 cup fresh watercress sprouts to garnish
- salt and black pepper to season
Ingredients

- Heat the olive oil in a pan until scorching hot.
- Add the strips of beef little by little and flash fry until done. Season. Set aside.
- To assemble, spread a tablespoon of beetroot hummus on each toasted slice of sourdough bread.
- Top with flash fried beef strips, slices of tomato and watercress. Season and serve immediately.
