There is a very good explanation why I posted these Pokémon Go Energy Bites today. I mean, how can you even think about roaming the streets without an energy induced snack, right?
My six year old immediately jumped on the bandwagon and my iPhone was quickly summoned into the whole debacle. He started catching Pokémons in the kitchen, dining room, TV room, up and down the stairs, on our beds, in the shower and the trip quickly escalated into the garden and finally, out on the street.
He got streetwise you see.
Eventually he had built up more Pokémons than most teenagers and the chase even continued in the car, at the grocery store and the streets of our complex.
After one or two exhausting trips down the street, I offered to make a healthy snack for my VERY fussy little boy, let’s face it – my nightmares about a kid that doesn’t like food became reality.
All hail the Pokémon Go Energy Bites. I thought it was the perfect moment to spin a story about how much it takes out of you to go hunting down these little creatures and that you will need all the energy you can get.
Home run.
As soon as my kid saw these little bites, he went kind of crazy and started chomping down – demanding these morsels make their way into his lunchbox the next day. The relief.
They consist of pretty much a whole lotta goodness, besides the fact that I used white chocolate to finish them off. Dates, natural peanut butter, rolled oats, chopped nuts and coconut made their way in and to say that this recipe is as easy as, well, catching Pokémons, is an understatement.
Am I the only one struggling to get my kid to eat more WHOLE foods? I think I must rethink my strategy and use one of his favorite pastimes as motivation. YES!

- 250 gr pitted dates chopped fine
- 2 tablespoons butter
- 1 cup desiccated coconut
- 1 cup rolled oats
- 4 tablespoons natural peanut butter
- 1/2 cup chopped mixed nuts
- 5 ml vanilla essence
- extra coconut for rolling
- 180 gr white chocolate slab
- white chocolate disks for garnish
Ingredients

- Heat the butter in a small saucepan and add the chopped dates. Keep heating and mixing until melted and soft. Remove from heat.
- Immediately add the coconut, oats, peanut butter, nuts and vanilla essence.
- Mix through with a spoon.
- Using your hands, shape small balls and dunk it in more coconut.
- Melt the white chocolate over a double boiler and carefully stick each disk in the middle of each energy bite.
- Drizzle with white chocolate and serve.
It is best to shape these energy balls while they are still warm - be careful not to burn.
