- 1 whole chicken free range
- salt and black pepper to season
- 30 ml olive oil to rub the chicken

- Rub the chicken with a whole lot of salt and black pepper. Be generous and also try and rub the seasoning under the skin.
- Use the olive oil to rub into the chicken as you season.
- Chuck the chicken on the roasting tray, put your oven on 200 degrees Celsius and bake for 1 hour and 30 minutes with no lid or covering.
- Add five more minutes on your clock, set the oven on grill, and leave the chicken to crisp up even more.
- Serve with grilled veggies and roasted potatoes.
