I am absolutely crazy about pasta dishes. I love the versatility, flavors, ingredients and the effortlessness that goes into creating a great dish that you can serve any time of day. The best thing about a pasta dish is that it is so easy! Cooking for a family every night, I vow to only use the easiest and quickest recipes. Pasta dishes are “one pot wonders” I always say. Ok, so you technically need two pots, one for the pasta and one for the sauce, but in 8 minutes you get a beautifully pot of cooked pasta! It takes me longer to brush my teeth!!
So here we go, the possibilities are endless. There are hundreds of combinations for great pasta sauces. I am keeping it simple – ingredients that are easy to get, and most of all in a normal housewife’s pantry. Enjoy!

Pasta with Chicken, Tomato and Mushrooms An easy pasta recipe with chicken, tomato and mushrooms.

Instructions
Heat the olive oil in a saucepan and brown the chicken. Set aside.
In the same pan, saute the chili, garlic, thyme and mushrooms. Saute for 4 minutes.
Add the tomatoes, cover and simmer for 15 minutes.
Lastly add the cream and chicken and allow to simmer for 5 more minutes.
Serve with cooked pasta, parmesan and fresh basil.
