Gammon, Green Bean and Avocado Salad
I don’t know about you guys, but after indulging in every kind of carbohydrate this holiday all I seem to crave is salad. It’s definitely the best way to get back into shape and with simple and easy recipes like this Gammon, Green Bean and Avocado Salad – I am ready to get out of my fat pants. Like literally.
I made this gorgeous salad with leftover gammon from our Christmas celebrations. You might have seen the Gammon with Cherry and Red Wine sauce recipe make its appearance last year, it was an enormous piece of meat and I ended up freezing slices of it to use for exactly this kind of recipe.
If you don’t have leftover gammon in the freezer however, this recipe might just be a great excuse to chuck one in the oven or simply use smoked pork or Kassler pork chops which cooks much faster with little waste.
The smokey meat goes incredibly well with the creamy avocado and the green bean gives a nice crunch to the salad. Serve with a honey and mustard dressing and you are good to go. This recipe is also a pretty nice low carb salad – sticking to that resolution this year, for sure!

Instructions
On two plates, arrange the micro greens or lettuce.
Arrange the green beans, pork, and avocado.
Serve with honey and mustard salad dressing.
