These delicious muffins are such a nice treat for a tea or after dinner snack. The great thing about them is that the kids might enjoy them as much as you, and with all the healthier ingredients you will find in popular health muffins, it sure will nourish them as well. Then again, the word healthy might be argued with.
This recipe of Fruity Citrus Muffins contains the popular healthier options like dates, raisins and honey but in contrast with that comes the sugar and the flour. So what I am trying to say is, that it is a much better option to bake these muffins, than a double chocolate chip whammy muffin when your aim is to be a bit more health conscious.
This recipe was a great hit when we recently met up with some of our family members for a quite weekend away.
The addition of citrus in this recipe ensures a fresh and summery taste and the beautiful texture of fluffy baked batter with the addition of raisins and dates almost gave a Christmassy feel to them. They are topped with a sweet and tangy iced orange glaze that just added that extra zest.
Preheat the oven to 180 degrees Celsius and prepare a muffin pan by lining them with muffin cups.
This recipe should deliver about 2 dozen muffins, depending on the size of your muffin pan. These Fruity Citrus Muffins are so moist on the inside, it will literally melt in your mouth and it only takes a few minutes to prepare, with minimal dishes, as it is quickly prepped in the microwave before baking. Surely became a BIG hit in our house – the fewer dishes the happier mommy is!

- 250 gr dates pitted and chopped
- 250 gr raisins
- 150 gr glazed cherries diced
- 1 1/4 cups brown sugar
- 2 tablespoons honey
- 400 gr butter
- 1 cup water
- 1/2 cup fresh orange juice
- 2 large eggs
- 3 cups flour
- 1 1/2 teaspoons baking soda
- zest of one orange
- 2 cups confectioners sugar
- few tablespoons orange juice

- In a microwavable bowl, add the dates, raisins, cherries, sugar, honey, butter, water and orange juice. Microwave these ingredients until melted and incorporated. The raisins and cherries will still be intact, but the dates will melt beautifully within the mixture resulting in a shiny brown batter.
- Add the eggs, and mix thoroughly.
- Sift the flour and baking soda into the mixture and mix until just incorporated.
- Grate the orange zest in the mixture and give it one more stir.
- Add spoonsful of batter into the muffin holders, halfway to the top. Set the oven down to 140 degrees Celsius and bake for 20 – 25minutes until golden. A tester pick should come out clean but still moist as these muffins have a very moist inside.
- While the muffins are in the oven, prepare the glazed icing by adding a few tablespoons of orange juice to the confectioners’ sugar in another mixing bowl. Add the juice little by little to ensure you gradually end up with a droopy glaze rather that a juicy one.
- When the muffins are done baking, remove them from the pan onto a cooling tray and gently drizzle the icing over the tops of the muffin.
