It consists of your favorite chicken cuts, smothered in a tomato relish with sweet chutney and a hint of curry, with beautiful pieces of potato and fresh rosemary. This is such a flavorsome combination of ingredients – feel free to add other vegetables to the mix, and you will have a wholesome meal in an instant.

- 1 onion finely chopped
- 1 teaspoon crushed garlic
- 2 teaspoons garam masala
- 2 cans peeled and chopped tomatoes
- 4 tablespoons balsamic vinegar
- 4 tablespoons fruit chutney
- salt and black pepper to taste
- 8 chicken pieces
- 2 large potatoes peeled and diced
- 2 sprigs rosemary

- First off, in a large casserole dish combine the onion, garlic and spices.
- Mix through, then add the tinned tomatoes, vinegar and chutney. Mix and season.
- Arrange the chicken pieces and potatoes in the tomato sauce, cover and bake at 180 degrees celsius for 30 min.
- After baking time, remove the lid and leave to roast for 25 minutes until sauce has reduced, potatoes are soft and mashy and chicken has browned.
- Serve with your choice of starch or salad.
Hi, your recipes look delicious. I’m looking for a recipe I used to have. I lived in South Africa for 3 years, in Randfontein and later Kruegersdorp. I worked with the townships in the area. At big events where food was served there was a dish, can’t remember the name, can’t find the recipe card I’d made.
Is there a recipe you know that has tomatoes, green/red pepper, onions, olives, chicken, pineapple, peanuts, hard boiled eggs, and peach chutney over a curried rice?
I’d luv to get that recipe back. The church I go to here in the States has had a team go to Rustenberg and are doing dinner event mid September I’d like to serve it there.

I can only think that your version is some kind of rice dish or some sort of briyani? It sounds absolutely delicious by the way and a sure way to feed a crowd!
Im looking for a recipe that i used to cook from a Tastic Rice recipe nearly 20 years ago The kids loved it and now they want to cook gor their children It was with chicken drumsticks on the stove with tomato puree Worcestershire sauce n brown sugar I can’t remember the exact measurements Please help Thank you
Hi Amelia, Thanx for popping in! I’m not sure if this is the right recipe I’m thinking of, but you can brown the chicken drumsticks in a pan, add seasoning and then the sauce (I would say about 1/3 cup tomato puree and 1/3 cup worcestershire sauce with 2 tablespoons sugar) You can also remove the chicken pieces from the pan to mix the sauce together. Add 1 cup raw rice, mix through the sauce (add extra water or stock for rice to cook in) replace the chicken pieces and finish off in the oven until the rice is cooked. Hope this helps!
