It is so hard to name a cookie you just baked or invented or whatever you may call it, especially if it consists of a lot of ingredients that makes it really special. This cookie recipe is really a very versatile recipe indeed. As I tried to keep it fairly simple, it can be transformed into a few variations in no time.
The first of many ingredients that can make this cookie special is the use of spices. I used pimento allspice in my recipe, resulting in a delicious chewy spiced choc cookie – seriously too long for a name!
You can add cinnamon or ginger if you like or you can even add a little bit of chilli powder as I used only dark chocolate. We all know what that combination is like: chilli and chocolate = addictive!
For another variation you can add chopped nuts of your choice, to create a delicious crunchy texture – with an extra bonus that it tastes divine!
No matter what you do with this recipe, it is bound to be a huge success! The result is a mouthwatering chewy centered cookie with a crispy outside, the delicate flavor of allspice and creamy dark chocolate.
Preheat the oven to 180 degrees Celsius and line a few baking sheets with parchment or wax paper. I also sprayed a little nonstick spray onto the paper.

- 180 gr dark chocolate
- 50 gr butter
- 70 gr flour
- 1/2 teaspoon baking powder
- pinch salt
- 5 ml pimento all spice
- 2 large eggs
- 250 gr brown sugar
- 1 teaspoon vanilla essence
- 1 cup dark chocolate chips

- In a microwavable bowl, melt the butter and chocolate and set aside.
- Sift the flour, baking powder, salt and spices together in a mixing bowl.
- Then with an electric mixer, beat the eggs, sugar and vanilla essence until creamy and add the melted chocolate and butter and mix.
- Add the flour and chocolate chips and give a good mix.
- The batter looks runny – like cake batter. Drop teaspoons of batter on parchment paper and bake for 8 minutes on 180 degrees Celsius.
- Remove from oven and leave to cool down, before carefully pulling the wax paper from the bottoms of the cookies.
