Beef strips with Mustard and Feta
Beef strips with Mustard and Feta
Today I would like to share an easy and simple recipe of Beef strips with Mustard and Feta. It is a great recipe to have on hand when you need to get dinner on the table, especially for those dreaded weekday meals. Don’t you just hate it when you are out of ideas for dinner? After a long day of work and family matters, I just want to chill with a glass of red, mind you…
Beef strips are flash fried and engulfed in a creamy wholegrain mustard sauce, topped with danish feta and served with blanched courgette strips and buttered pearl onions, making it the perfect banter friendly dinner.
It is quite a versatile dish, you can serve it with fluffy basmati rice for the non banters or perfectly cooked pasta would also do the trick. If you don’t like the idea of whole onions, slice a large onion and caramelize it instead.
I use full cream Greek yogurt in almost all my sauce based meals. It is just so versatile and lasts long in the fridge. I think I have mentioned that before, so I hope you try it out too. Let me know if you have any kitchen cheats of your own? Enjoy!

Instructions
First off, heat the olive oil until scorching hot in a non stick pan.
Add the beef strips, a small hand full at a time, allow to fry until brown & season as you go along, until all the meat is done. Remove meat from pan.
Take the pan off the heat, add the yogurt, mustard and seasoning. Mix until you are left with a creamy sauce.
Heat the butter in a saucepan and saute the pearl onions until caramelized.
Plate your courgettes, onions or your choice of starch and add the strips with loads of creamy goodness and top with feta.
