Bacon Wrapped Stuffed Chicken
It is a confusion of note to try and figure out what to call this one. No doubt that this chicken dish is totally delicious and super simple. Best of all, this recipe gives the chicken breast a good face lift – an ingredient that often leaves us with zero inspiration.
Get this – Tender baked chicken breast, wrapped in bacon and stuffed with sun dried tomato, cheddar and basil pesto. I guess mozzarella cheese would also do wonders, I only had mature cheddar in the fridge, and I have to admit that the strong cheesy taste was amazing!
Try this Bacon Wrapped Stuffed Chicken for an easy dinner idea, serve it with your choice of starch – if you do carbs – or grilled vegetables if you don’t. Doesn’t really matter, it’s a Winna Winna Chicken Dinna!

Instructions
Heat the oven to 190 degrees Celsius, and prepare an oven safe dish with a drizzle of olive oil.
Cut a pocket into the chicken breast fillet, and stuff it with slices of cheese, sun dried tomato and lashings of basil pesto.
Wrap each breast in 3 – 4 slices of bacon, fasting it with toothpicks for the baking process.
Bake in a preheated oven for 30 – 40 minutes, and serve with your choice of starch or vegetables.

I would call this dish “Ruby chicken ” I make a similar dish but use philly cheese, serve with a pesto sauce on a bed od rice
