Heeha, at long last spring is on its way! The best way that I can enjoy lunch on a lovely sunny day is to have a summery meal of Chicken and Sundried Tomatoes in a wrap!
Wraps is a great ingredient to use when you want to whip out something easy and quick. Any ingredients can make this meal really great. I was going for a fresh and healthy approach to enjoy my wrap today!
Serve wraps to the family ANY time of day. It is great for a light lunch and even better served as dinner with a side dish of fresh salad or veggies. You don’t have to be an expert when compiling something like this – it is really easy and simple!

- 4 wholewheat wraps
- 20 ml mayonaisse
- 4 chicken breast fillets cut into strips
- salt and black pepper to season
- 15 ml olive oil
- 2 cloves garlic finely chopped
- 1 birds eye chili chopped fine
- 1 red onion sliced
- 1 green pepper sliced
- 1 yellow pepper sliced
- 80 gr sun dried tomatoes
- 1 cup cheddar cheese grated
- drizzle hot sauce
- fresh parsley to garnish

- Heat the olive oil in a saucepan and brown your chicken strips until done. Season with salt and pepper. Remove from pan, leaving the juices behind.
- Sauté the garlic and chili Add the onion and peppers and sauté until soft and translucent.
- Combine the chicken and vegetables in a mixing tray.
- In a clean saucepan, toast your wrap on either side to heat it up. Remove from pan and set on plate.
- Then add mayonnaise and spread it over the wrap.
- Add the chicken and peppers on one side of the wrap.
- Add the cheese and sun dried tomatoes.
- Garnish with fresh parsley and drizzle with hot sauce. Fold the wrap and enjoy!
