One thing I learned on this plant based journey, is that you don’t have to skimp on yummy desserts! I decided to share this super easy Vegan Coconut and Berry Nice Cream recipe with you all today. The perfect refreshing, plant based dessert, made with frozen banana, berries and coconut milk, to keep you super cool and refreshed.
What is Nice Cream?
What is nice cream? Well, fancy you asked. Simply put, nice cream is a dairy free alternative ice cream, made with a base of frozen bananas, whipped up to a soft serve. Jip, believe it! You are only three ingredients away from enjoying a delicious guilt free ice cream friends!
Nice Nice Baby
You can obviously add your own mix of ingredients and flavours if you like. Think nuts, chocolate, maca, chia – the possibilities are endless! Sweeten the deal by adding maple or agave syrup if you are more of a sweet tooth. I decided to use frozen berries and coconut milk for a creamier consistency, and since the processor does all the work, you are pretty much sorted. Scoop and enjoy!
Once you are ready to indulge, serve your nice cream with fresh or frozen berries and pomegranate seeds. And of course, scoop it up and present it in these beautiful ramekins from the Sorbet Collection from my friends over at Le Creuset.

- 4 frozen bananas
- 1 cup frozen berries
- 1/2 cup chilled coocnut milk
Ingredients

- In a food processor, blend the banana, berries and coconut milk by pulsing and scraping the sides of the bowl every now and then.
- Blend for 5 - 8 minutes until smooth. Serve immediately or transfer to a container and freeze for another 2 hours before serving.
You can make this nice cream way in advance! Simply take it out of the freezer an hour before serving, if the nice cream has been in the freezer overnight.
