lightly blanched and chopped

Instructions
In a saucepan, heat the oil and sauté the onion and garlic until translucent. Add the thyme and stir. Remove from the heat.
In a large mixing bowl add the flour, cheese, baking powder and salt. Mix.
In a smaller mixing bowl, whisk the eggs with the milk and add this to the flour and cheese mixture. Mix quickly until just incorporated.
Add cooked spinach and onions by folding it into the batter.
Sprinkle crumbed feta cheese, and season with cayenne pepper.
Bake at 180 degrees Celsius for 40 minutes until golden brown.
