Ingredients

pitted dates
chopped fine

tablespoons
butter

cup
desiccated coconut
1
cup
rolled oats
4
tablespoons
natural peanut butter
1/2
cup
chopped mixed nuts
5
ml
vanilla essence
extra coconut
for rolling

white chocolate slab
white chocolate disks
for garnish
Instructions
Heat the butter in a small saucepan and add the chopped dates. Keep heating and mixing until melted and soft. Remove from heat.
Immediately add the coconut, oats, peanut butter, nuts and vanilla essence.
Mix through with a spoon.
Using your hands, shape small balls and dunk it in more coconut.
Melt the white chocolate over a double boiler and carefully stick each disk in the middle of each energy bite.
Drizzle with white chocolate and serve.
Recipe Notes
It is best to shape these energy balls while they are still warm – be careful not to burn.
