  1. Slice the red onions in rings of about 3mm thick.
  2. Add the red wine vinegar, water, sugar and spices in a small saucepan and bring to the boil. Remove from heat and allow to cool slightly.
  3. Place and pack the sliced red onions into the mason jar and cover with pickling liquid.
  4. Add the herbs, and allow to cool completely before you close the lid and place in the fridge.
