  1. First off, add the vegetables to a boiling pot of salted water and blanch for about 5 minutes. Drain and transfer the veggies to an oven safe dish.
  2. Season with salt and pepper.
  3. Mix the coconut milk and cream with an electric hand mixer, add the spice and pour it over the veggies to cover.
  4. Bake for 20 minutes at 180 degrees Celsius. Garnish with fresh parsley and serve with basmati rice.
