Ingredients

chicken breast fillets
butterflied and pounded flat

teaspoon
chicken spice
to season chicken
salt and black pepper
to season

butter

cup
fresh cream

tablespoons
mayonnaise

tablespoon
hot sauce
any of your choice

tomato
finely chopped

red onion
finely chopped

cooked basmati rice

Instructions
First off, season the chicken breast fillets and fry until golden and cooked in butter.
Remove the meat from the pan and while on high heat – add the cream to the pan.
Remove from heat and allow to reduce.
Add the mayonnaise and hot sauce, mix and allow to simmer for a few minutes more on medium heat. Set aside.
In a mixing bowl combine the chopped tomato and onion. Mix it through the cooked rice.
Serve the cooked chicken breasts with creamy sauce and salsa rice.
