In a nonstick pan, heat the butter and caramelize the onions until soft and translucent.
Keep it on the heat until it becomes brown and caramelized. Remove the onions.
Add the bacon and fry until crispy. Remove from pan.
If you need extra butter/oil in the pan you can add more (if you are Banting) otherwise you can use the fat from the fried bacon to do fry your omelette with.
Add the eggs to a bowl, whisk and add it to the hot pan. Season with salt and pepper and allow too cook through, flip it over and keep it on the heat for another few minutes.
Transfer to a plate and add your fillings. Serve with micro greens. Serves one.
