Easy quiche pastry
- 2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 125 gr butter softnened
- 20 ml cold water
Butternut, feta and thyme filling
- 1 butternut peeled, and chopped into chunks
- 10 ml olive oil
- 1 onion finely chopped
- 1 clove garlic finely chopped
- handful fresh thyme
- 3 large eggs
- 3/4 cup milk
- 1 cup cheddar cheese grated
- 1/4 teaspoon salt
- 1/2 cup feta cheese
- salt and black pepper to season

Easy quiche pastry
- Add all the dry ingredients and mix.
- Next add all the wet ingredients and work with your fingers until easy manageable dough is formed.
- Line your tart or quiche tin with dough by pushing it firmly down with your fingers.
- No need to blind bake this dough, simply add your filling to the raw crust and bake desired time.
Butternut, feta and thyme filling
- Arrange butternut in an oven safe baking dish and roast until soft for 20 minutes at 180 degrees Celsius.
- In a saucepan, heat the oil and sauté the onion, garlic and thyme, remove from heat.
- In a mixing bowl mix the eggs, milk, cheddar cheese and salt and black pepper.
- Add the grilled butternut chunks and onion. Mix through without smashing the butternut.
- Carefully pour into raw pastry and sprinkle with feta cheese.
- Bake for 30 – 40 minutes at 180 degrees Celsius, until set.
