Bruschetta with Red Pepper and Fennel

I am just in love with fennel.  It gives a deep flavor to any dish.  Today I combined fennel with red pepper just for the fun of it! The pepper compliments the flavor of the fennel magnificently. Add a few grinds of chili flakes to add a more oriental taste to this great dish.

• 1 clove garlic crushed
• 3 tablespoons olive oil
• 1/2 red pepper thinly sliced
• 3 tablespoons fresh fennel leaves
• salt and black pepper to season

Instructions

1. Rub the sliced bread with garlic and drizzle with olive oil, grill until brown and toasted.
2. Arrange the red pepper and fennel on garlic Bruschetta. Season and serve.
