I love a good breakfast. You should too. Not only is breakfast the most important meal of the day, it is also a chance to spend a few minutes with your loved ones before they all scatter to start their working or school days.
However nice that all sounds, weekday breakfasts can be rather challenging. Getting yourself, the kids and the caveman ready for their day kind of takes a lot of time. Given that we almost always oversleep, my household becomes a bit of a war zone in the morning.
One of my favorite breakfasts however, come rain or shine, has to be the versatile omelette. It might not be as fast as scrambled egg, but it sure hits the spot when you need a good balanced start to your morning.
With this recipe of Biltong and Cream Cheese Omelette, I used delicious slivers of biltong, with cream cheese, cheddar and chives to create a comforting breakfast. With a good cup of coffee, this sure is the best start to your day. Hold on, the weekend is around the corner!

Instructions
Heat the butter in a non stick frying pan, and add the eggs, leave it to bubble. Turn it over, season, and allow to cook through.
Remove from the pan to a plate, add the cheddar cheese, biltong and cream cheese to one side.
Garnish with chives and serve with buttered onions.
