Spring has officially sprung here in the South. Joburg has been blessed with two weeks of incredible spring weather, and I can’t be more excited for the arrival of summer!
It is also so, that I found myself more intrigued and satisfied by a bowl of fresh salad than anything else. What better way to indulge with delicious, spicy, chilli Biltong – a popular South African snack – transformed with fresh tomato, basil, fior di latte mozzarella and basil pesto to create a stunning salad or side dish in mere minutes.
I got to try the flavorsome chilli biltong from my usual meat stockists – Biltong@za. They sent me a huge bag of wet, fatty, chilli biltong to play with this month. Aren’t these guys just the best?
Being pretty versatile, this best-loved type of cured and spiced meat can be used in an array of dishes including Biltong and Cheese Puffs, Biltong and Basil Pate, Biltong and Cream Cheese Omelette, Biltong and Blue Cheese Salad with Candied Pecans or these Cream Cheese and Biltong Truffles.
I can’t think of a more delicious side dish to your braai or roast this summer. You simply have to drop in at your nearest Biltong@za meat specialists to stock up on their incredible biltong and loads more produce.
I don’t about you guys, but my weekend menu is sorted. A few chops on the grill, maybe a ‘braaibroodtjie’ or two and this insanely flavorsome Biltong and Caprese Salad. Enjoy!

- 350 gr exotic tomato mix
- 150 gr fresh fior di latte mozzarella cheese
- 2 cups chili biltong
- 3 tablespoons basil pesto
- handful fresh basil to serve
- olive oil to serve
Ingredients

- On a large salad bowl, arrange cut tomatoes, mozzarella and biltong.
- Spoon over basil pesto.
- Garnish with basil leaves and serve with olive oil.
