And of course, cooking dinner seem to demand more and more time and effort. The one thing that doesn’t give a damn about us…
So this recipe of Beef and Tomato Rotini came to be the perfect comforting pasta meal as I was about to loose my grip on reality.
This recipe is super easy and utterly delicious. I mean, to me, pasta just makes the world a better place.

- 2 cups cooked rotini pasta
- 15 ml olive oil
- 300 gr rump steak cut into strips
- salt and black pepper to season
- 4 ripe tomatoes blanched and chopped fine
- 1 can peeled and chopped tomatoes
- 2 tablespoons tomato puree
- handful fresh rosemary chopped
- handful fresh thyme chopped
- roasted cherry tomatoes to serve
- fresh basil to serve
- feta cheese to serve
Ingredients

- Heat the olive oil in a grill pan. Sear the steak to medium rare. Set aside.
- In a pot, add the blanched tomatoes, tinned tomatoes, tomato puree and herbs. Simmer for 15 minutes.
- To serve, mix the sliced meat with the tomato sauce and add the pasta.
- Serve with basil, add the crumbled feta cheese and roasted cherry tomatoes.
That was delicious! I did saute a little onion and garlic to the pan after setting the steak aside and then added the tomatoes. Thank you for the recipe!!
