It is Mother’s Day again on Sunday. It was only Mother’s Day a year ago, but it felt like yesterday when I wrote this post, halfway through writing it, I was bawling my eyes out. But this year, I feel much more composed and excited to be sharing this amazing recipe of Vanilla and White Chocolate Bundt Cake with you all.
It is a recipe passed down from my late Aunt, who had five boys. No jokes. Mother of the year.
I never knew her, but the stories my mother tells me are pretty amazing – and I have heard some people say that I remind them a little of her. A bubbly, funny and energetic woman –she sure had the right recipe to treat all the little ones she had running around her house.
This is a one-bowl vanilla cake recipe. One bowl. Say it. Believe it.
I used my electric mixer, added all the ingredients together and mixed it for about 5 minutes. The result? An amazingly decadent, fluffy and soft vanilla cake.

Preheat the oven to 200 degrees Celsius, and prepare a bundt cake pan with nonstick spray.

- 1 cup butter softened
- 1 cup cold milk
- 1 1/2 cups sugar
- 4 large eggs
- 2 teaspoons vanilla essence
- 1/4 teaspoon salt
- 4 teaspoons baking powder
- 3 cups flour
- 150 gr white chocolate cut into chunks
- 150 gr white chocolate to drizzle over cake
Ingredients

- In an electric mixers bowl, add all the ingredients, except the chocolate chunks, and mix on high for 3 – 5 minutes.
- Add the white chocolate chunks, mix through and pour the batter into the pan.
- Bake for 45 – 50 minutes on 180 degrees, until tester comes out clean.
- Leave to cool, and drizzle with melted white choc.
3-5 mins is that right..? it seams long to mix a cake.
