I am all for quick, budget friendly meals these days.  A simple dish like Chicken Strips and Rice can really take your bucks a long way when you need to feed a crowd (a.k.a Man & kids).

If you really want to spend less time in the kitchen cooking for that crowd, supermarkets all over are stocking the most mouthwatering and convenient sauces and marinades with great flavors, and I just love the Nandos range, don’t you?

You simply cover a whole lot of chicken strips with the sauce/marinade; chill it in the fridge for a while so that it can just take in all that tastes and goodness, and whala!

Or if you want your recipe to be a bit more, well, original – you can always whip up your own little spicy marinade.  Seriously peeps, it’s not that difficult…

It’s as easy as that! This has become quite the popular dish in our house and hubby likes his chillies a lot, so I always add a little extra chilli when I brown the chicken.  It is a delicious comforting meal and will heat you up in no time!

Homemade Peri Peri Sauce
  1. First off, in a medium saucepan, add the chopped chillies, garlic, pepper, spices, herbs and olive oil – bring to a simmer and sauté for a few minutes.
  2. Transfer to a blender or food processor and blend with the rest of the liquids. Cover the chicken strips with marinade, salt and pepper and refrigerate for at least an hour.

  1. When you are ready for din din, prepare your rice, heat some olive oil in a wok or nonstick pan, and brown the marinated chicken strips until done.
  2. You can add the rest of the leftover marinade with the chicken strips and add a ½ cup of boiling water to increase the amount of sauce.
  3. When your rice is cooked, plate up, add the chicken strips, drizzle with marinade and garnish with fresh herbs. Season to taste.
