Let’s just face it. When beautiful figs comes into season, you grab the opportunity head on and stock up. One reason? This nutritious Fig and Chia Seed Smoothie of course! This healthy, dairy free drink is a combination of a chia seed pudding and a fig smoothie. This smoothie will surely transform your mornings and is completely dairy free and plant based.
Figs Figs and More Figs.
Not only have I used fresh figs to garnish the side of my glasses, I also incorporated it into the smoothie. Figs are high in fibre and contains essential minerals that promotes bone density and helps with blood sugar levels. They are the prettiest fruits on earth, and makes for a pretty tasty smoothie, if I have to say so myself!
I highly recommend making this salad when you get your hands on some fresh figs!
The Chia Seed Pudding Vibe
I was very skeptical about the whole Chia Seed Pudding vibe. Let me explain: When you soak chia seeds overnight, they swell up and literally transform into a jelly like substance. It almost has the same consistency than tapioca pudding or sago. If you are not a fan of that type of texture, this is certainly something to get used to.
I decided to soak my chia seeds in coconut milk, with maple syrup for sweetness and vanilla essence for a deep flavour. You can soak them for about 2 hours, but for the best results, I recommend soaking them overnight, refrigerated.
Nutritious and Delicious Smoothie – at the same time.
Chia seeds are HUGE right now, since the demand of nutrient dense plant based ingredients has taken the world by storm. They are an excellent source of energy, with loads of omega 3 fatty acids, antioxidants, fibre, iron and calcium. Chia seeds has a staggering 16.5gr of protein per 100 gr. Great source of protein if you are following a plant based or vegan diet.

- 6 tablespoons chia seeds
- 2 cups coconut milk you can also use any other dairy free milk
- 1 teaspoon vanilla essence
- 2 tablespoons maple syrup honey can also be used
- 6 fresh figs keep two for the garnish
- 2 cups almond milk
- 1 frozen banana
- 1/2 teaspoon vanilla essence

- For the Chia Seed Pudding: In a ceramic mixing bowl, combine the chia seeds, coconut milk, maple syrup and vanilla essence.
- Stir until well combined. Cover with clingfilm and refrigerate overnight. You can also give it two stirs once or twice to keep the chia seeds from clinging together.
- Once you are ready to enjoy your smoothie, scoop the soaked chia seed pudding in the bottom of your smoothie glasses.
- Cut two figs lengthwise in slices, and arrange on the inside of your smoothie glasses.
- For the smoothie: You can peel your figs, or simply roughly chop them and blend with almond milk, vanilla essence and one frozen banana until smooth.
- Carefully pour the smoothie into your glasses, on top of the chia pudding. Enjoy!
