Upside Down Apple Cake

Ho ho ho! It is finally that time of year again when we can look forward to a great festive time with our families and finally a few weeks off!  I am sure by now you have already made plans for your Christmas Holidays and that every single last bit of detail has been sorted.  If you are still wondering about your festive menu for eats and drinks – I have the perfect solution to that afternoon tea or coffee time.

I have been pondering on this recipe for about a week now.  I was simply tempted to use the apples that have been looming on my kitchen counter for the last two weeks.  They seemed to be calling out to me to use them and create a lovely and sweet dish to please my culinary craving with.

Apple Upside Down Cake

This recipe of Upside Down Apple Cake is an absolute must to serve to your guests as a tea time treat.  The delicious cooked apples in this recipe deliver a sweet yet tangy fruity flavor combined with the decadent taste of caramel and vanilla. A few shakes of cinnamon to top it off deepen the flavors of this dish and really makes it velvety and mouthwatering. It consists of caramelized apples topped with a cake batter, baked in the oven, drizzled with a velvety vanilla sauce and cinnamon.

The most difficult thing about this recipe was the actual coring and peeling of the apples, since I had the teeniest tiniest little gala apples that you find at supermarkets labeled “for kids”.  To top it all off, I’m not exactly equipped with the best kitchen utensils out there, so I had to do it the old fashioned way and literally peeled and cored these mini apples with a knife.  Now you know what I need for Christmas (amongst another huge list of wishes)

It might take some skill to turn your skillet upside down onto your plate or serving dish after the cake has been baked – but I can guarantee that if I can do it so can you!

Preheat your oven to 180 degrees Celsius.

  1. First off, melt your butter on medium heat in an oven proof skillet or saucepan. Add the sugar and mix to evenly spread through butter.
  2. Add the apple segments in a spiral or any way you want with the flat side in the butter. Cook the apples in this mixture until the butter turns yellow golden. This might take a while – so when this cooks you can start with your batter.
Batter
  1. Mix the sugar and butter until creamy – here an electric mixer is very handy. Add the egg yolks one at a time, after each beat well.
  2. Sift the flour, baking powder and salt and mix alternatively with the milk into the egg mixture until incorporated.
  3. By now your apples should be done – now you can spoon the batter over your apples and spread it evenly to cover the apples.
  4. As you put this into the oven you can start your vanilla syrup or sauce.
  5. Bake for 30 minutes at 180 degrees C, or until your batter is golden brown – make sure your batter has a nice brown color, because you will be adding a sauce over it – it really has to be baked right through. You can test with a knife or a tester pin.
Vanilla Syrup
  1. Add the milk, sugar, cinnamon and vanilla essence into a microwave safe bowl and microwave until sugar is dissolved and boiling.
  2. Gently pour this sauce over the baked apple cake while it is still very hot.
  3. Leave to cool for an hour or so before attempting to turn it over.
  4. When ready, cover the cake with your serving plate and carefully (and quickly) turn the skillet over. There might still be a few pieces of apple stuck to the buttery caramel, loosen with a fork and arrange on the cake.
