I’ve had zero time for breakfast the last two weeks as we were moving house and had a family wedding in Nelspruit. I simply can’t wait to get back in my studio and do a little shooting, hoping to keep you all inspired in the kitchen.
But first…
Eggs on toast.
This is a staple in our house. No kidding. We have eggs on toast most mornings (like five times a week) after gym and before hubby has to rush out to work. It just gets a little boring sometimes though, right?
However, I was struck with inspiration the other morning when I realized I had leftover garlic bread from the previous night’s barbie. You know, garlic bread almost always makes an appearance at a braai and there’s always garlic bread leftover.
So guys, just give some love to your leftovers and transform your morning routine with a delicious breakfast everyone will enjoy.
If you have a french loaf or ciabatta lying around, you can easily make garlic bread from scratch by cutting open a clove of garlic and rubbing it on slices of toast with some dried mixed herbs for taste.
This is a great recipe to keep on hand for those weekend brunches after a little rendezvous with a couple of friends. Keep it cool!

- 4 - 6 slices leftover garlic bread
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 large eggs
- 1 cup rosa tomatoes
- salt and black pepper to season
- tabasco or hot sauce to serve
Ingredients

- Place leftover garlic bread slices under the grill for a few minutes to crisp up. Set aside.
- Heat the butter and olive oil in a non stick pan and fry eggs to your liking. Season.
- Arrange the tomatoes in an oven tray and drizzle with olive oil. Grill until wilted.
- Arrange slices of garlic bread toast on plates, top with crispy fried egg, tomatoes and hot sauce.
