It is the most dreadful day of the week. Monday. You are most probably caught up in some kind of work crisis, in between juggling the kids’ extra mural activities, the house is in a mess after the weekend and your hubby nonchalantly phones you and asks: “What’s for dinner, Bokkie”?
The first thing you would likely do is to have a hissy fit in the privacy of your office, I know, but don’t worry, this recipe of Bacon and Mushroom Quiche will surely make you feel lots better.

Ingredients
Easy Quiche Pastry
- 2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 125 gr butter softened
- 20 ml cold water
Bacon and Mushroom Filling
- 1 brown onion peeled and chopped
- 1 clove garlic chopped fine
- 15 ml olive oil
- 2 teaspoons dried mixed herbs
- 250 gr bacon chopped
- 2 cups mushrooms chopped
- 3 large eggs whisked
- 3/4 cups milk
- 1 1/2 cups cheddar cheese grated
- salt and black pepper to season

Instructions
Easy Quiche Pastry
- Combine all the dry ingredients in a mixing bowl and mix.
- Next add all the wet ingredients and work with your fingers until easy manageable dough is formed.
- Next line your tart or quiche tin with dough by pushing it firmly down with your fingers. No need to blind bake.
Bacon and Mushroom Filling
- Heat the oil in a saucepan and brown the onion, garlic and bacon.
- Add the mushrooms and herbs and cook until dry.
- In a medium mixing bowl, whisk the eggs and milk. Add the bacon and mushrooms to it and mix.
- Add the cheese.
- Pour filling into raw pastry and bake for 40 min at 180 degrees Celsius.
