Garlic and Thyme stuffed Chicken
So everyone knows my favorite spice is star anise, but my favorite herb? Hands down – thyme has to be my number one. This herb is just so flavorsome and fresh; I can really see myself going mad if it ever had to be extinct!!
This combination for the chicken stuffed with garlic and thyme was quite coincidental, when all I had in my pantry was garlic cloves in between the used up chili and ginger. So garlic it was. And not surprising then that I chose thyme as the partner in crime that night for dinner. Wow. What a combination.
The outcome of this delicious recipe is almost creating a sweet taste, combining the thyme flavor with the sharp taste of the garlic. It really is a combination worth trying.
Preheat your oven to 180 degrees Celsius.

Instructions
In a small mixing bowl, combine garlic and thyme.
Try and open up the skin of the chicken on one side and stuff the inside of the skin with garlic and thyme.
Season the pieces of chicken with salt and black pepper.
Arrange pieces in an oven pan and bake for 1 hour until skin is crispy and brown.
