In this case, I wanted a satisfying vegetarian meal that can be whipped up in no time. This is it. Spaghetti with Broccoli and Avocado is simple, elegant and mouthwatering, perfect for a quick lunch or ideal for dinner.
It consists of stir fried broccoli florets with a dash of soy, spaghetti and creamy avocado served with Parmesan shavings and micro greens. Green for the win!
Umm, did anyone notice how easy and quick this is? Add grilled chicken breasts to the mix if you need to bulk it up with meat for the cavemen, and drizzle a bit of balsamic reduction in there for extra indulgence. Instructions
In a wok, heat the butter and add the broccoli florets, stir frying it until tender.
Add the soy sauce and saute for another few minutes.
Simply toss the spaghetti with the stir fried broccoli and serve with avocado, Parmesan and greens.
