A while ago I experimented with Chicken and Oranges. Take a moment… You might think that I have totally lost my mind here, but I can assure you, this recipe is worth trying out.
It consists of tender chicken pieces baked in a casserole dish with tangy orange juice and spices. Think of spices like cinnamon and star anise. My absolute favorites. The citrus adds a zest to the dish, and served with fluffy buttery rice, this should have your guests pleasantly surprised – and keen for seconds.
I used 100% orange juice in this recipe, and it gives just the right amount of tartness and sweetness to the dish, complimented by the spices. I hope you can give this Citrus Chicken Casserole a try, it is finger licking good!

Instructions
Heat the butter in an oven safe casserole dish on stove top.
Brown chicken pieces, season and remove from pot.
Add the onion and garlic, saute until translucent.
Put the chicken pieces back in the pot, cover with liquids, add the spices and bake in the oven for 1 hour.
Serve with fluffy rice and fresh orange segments.
